Needed recipes for no-protein foods that are very filling.

My daughter has a metabolic disease that requires her to not eat any animal proteins or animal protein substitutes such as soy, beans, nuts, etc.  Lately, we have been having a hard time satisfying her hunger pangs, as her diet is also limited in the amount of pasta products she can consume because wheat is high in protein.  She winds up eating a lot of potato chips and other such snack foods.  At nearly 19 she has trouble maintaining her 80lb. base weight on her strictly vegetarian diet.  Can anyone help.  We live in Greece for the time being where the availaibility of farm fresh produce is abundant and quite affordable with minimal use of chemicals as our family produces much of its own produce.  And we want to stay away from chemical dietary supplements and processed foods as much as possible.

Help us find recipes that do not require specialized low-proetin products as none are available here.  Thanks,

    Ewanna

    Hello Ewanna,

I have the same disorder, and I understand the bulk problem.  I can't even tolerate too many potato chips.  The diet I follow is basically fruit, veg, sauces and sweets.  I do make vegetarian pasta sauce, adding artichokes and olives, then just eat the sauce.  It's actually quite good.  And I use squash (inter squash) as a main course.  It's quite filling.  Tomato soup?  Can you get gelato there?  In moderation, chocolate.  Of course, salad.  I always have a big serving.  Shredded cabbage doesn't have to be cole slaw; you can put any dressing you want on it.  I am finding that I want a lot of flavor in foods these days.  If you have any inspirations, I'd be happy to hear back.

Ewanna have you checked out Cambrooke Foods? They specialize in foods for PKU. They have several pastas. Pricey, but one of the only options for low protein food.
